Best way to cleanup desktop

We are currently looking to convert from Softdent. Have narrowed down our search to either Open Dental or Curve. Open Dental gets better reviews but the initial screen after a trial conversion looks very cluttered. Curve looks much nicer visually. What are suggestions to clean up the interface and make it more user friendly?
