Change the Referral Specialty List

Is it possible to change the specialties in the referral specialty list? I wanted to add a category for "Insurance Company" since we receive so many referrals from them. Is there a better way to do this? Thanks

It's currently hard coded. Feature request #1361 is to make it customizable.
The best thing about a boolean is even if you are wrong, you are only off by a bit.
