Am I correct in assuming that once created, like matter and energy, they can never be destroyed or renamed?

They can only be destroyed if they are not in use (basically they can't be deleted). You should be able to rename them at any point in time.
This is a good time to mention feature request #297 which is to hide and re-order pat field defs (hide would solve your "delete").

Great, thanks for the info. I have to try renaming. There are three unused (by us) ones that were created when I had the conversion from dentrix.
