Question... from our knowledge, eServices requires a user being logged into a running instance of OD on the same machine that eServices is installed on. Is that true still?
If that is the case, what is the least OD privileges that the logged in user can have so that eServices still work?

That is not required. As long as your eConnector service is running on one computer, nobody needs to be logged on.
